There is a highly reviewed piece of dos freeware, htmstrip, by Bruce
Gutherie, that strips html tags from a message, file, or piped text.
It is highly configurable to do things you want with a genuine init
file.

Email clients let you pipe messages through any filter (e.g., htmstrip)
and view the results on your screen, save the results, etc. Pine even
lets you automatically select emails, based on keywords in text or other
criteria which will autotomatically get filtered through a program of your
choice.

I can not speak to the degree that the numerous other gui email clients let
you run external programs on their messages.
