It may be because video "white balance" is a subjective human
perception and is not the same as photo color correction or color
balance. In the real world, our brains rely (primarily) on our memories
to adjust color perception so that objects known to be white "look"
white. In strange surroundings or unusual lighting conditions, our
brains are easily fooled. By-and-large, video folks adjust for that same
subjective "white" and let the colors go where they may. Photographic
color correction/balance uses a number of objective measures, as well as
the shooter's subjective perceptions, to correctly render neutral grey
of 17% reflectance. Get that right and colors are right, including
white, although the white may not "look" white in the photo.
This is a gross oversimplification but this thread has wandered
wildly OT.
